The subtle difference!
Bearing in mind it is rather renowned among gourmets, some people will be surprised by the Sulmtaler's "recent prominence".
However, the "Sulmtaler Backhendl" - the breaded fried chicken with a golden, crisp coating, a must on local menus - is not to be equated with the breed of fowl cultivated by Armin Arbeiter and raised under the appellation of "Sulmtaler".
Completely independent from breed and raised in commercial poultry farms, the former represents merely its regional breeding area - nomen est omen - as a fried chicken specialty.
The latter, though, the "original Sulmtaler", represents a thoroughbred chicken, which as the culinary rediscovery of the year soars off to new spheres of flavour. In the open, our new ambassador of taste from Sulmtal may be identified by its generic crest and upright comb, folded in the front (Wickelkamm); in trade, by the Sulmtaler seal of approval; at the table, by their unexcelled taste.
